Brrrr! I think we all know what time of year we’re headed into. The time of year that I like to call, “Seasons Eatings”. Where the ponchos, sweaters, and jackets come out of hiding, and hide all of that extra chocolate cream pie your aunt made for thanksgiving. Knowing that the holidays are coming, and eating healthy is a lifestyle choice of mine, I took it upon myself to start researching healthy, yet delicious, recipes such as this one I’m sharing with you today.
This hot chocolate recipe is not only warm heaven in a cup, but it’s also Vegan, and Paleo friendly! I’m not a vegan myself, but found this specific recipe intriguing as it’s only 42 calories! You can find me in bed with one every night watching Friends on Netflix. But in case you’re reading this, and you are a Vegan, I listed a Vegan Whipped Cream recipe down below, that way it is the ULTIMATE vegan hot chocolate for you.
- 1/4 c water
- 1 tbsp cocoa powder
3-4 packets of Truvia, or sweetener of choice
- Pinch of instant coffee (optional)
- 1/4 tsp vanilla extract
- 1 c of unsweetened vanilla
almond milk (Almond Breeze)
In a mug, microwave 1/4 c of water for 15-30 seconds.
Add cocoa powder, Truvia, coffee, vanilla extract. Whisk for 5-10 seconds until everything is dissolved.
Add milk & stir.
Microwave for 1 1/2 – 2 minutes.
Give it a stir & top with cool whip, or vegan whipped cream, (recipe link below), a touch of cinnamon, and enjoy!
